Okay so its Ramadan and you have to make something fancy. I couldnt do something complicated in my situation so i went for this easy casserole.
First, you will need
3 whole chicken laps and drumsticks (together not seperated)
1 whole green bellpepper
1 whole red bell pepper
1 whole orange bell pepper
1 whole yellow bell pepper
1 whole onion
3 large carrots
Some peas
1 egg plant
worcestershire sauce
soy sauce
bbq sauce
2 seasoning cubes
salt
garlic clove and powder
ginger powder
black pepper
white pepper
cayenne pepper
bbq spice
chicken spice
cumin
turmeric
thyme
PROCEDURE
first off wash your chicken and place in a pot. Add garlic cloves, ginger powder and salt. Bring to a boil. Turn off and drain. In a seperate bowl mix in all spices and sauces. Cut vegetables in large chunks ( like the onion cut it in quarters and seperate them. Cut carrots in chunks. Bellpeppers in quarters too)
place chicken in a casserole dish and pour in the sauce mixture. In a skillet add in your veges and some of the sauce mix left (i forgot to tell you to take a serving spoon full of sauce and mix with half cup of water) pour over your veges and heat up for 3mins. Turn heat off and pour the contents over your chicken. Cut green spring onion(scallions) and spread on the casserole. Add white onions (from the scallions) put in the oven and bake for about 40-50mins or till chicken is brown and sauces come up.
