Peri peri chicken kebabs and Shrimp-Mayo-spring-rolls

Hey my kitchen minions 😘 so i was supposed to upload this recipe a while back but your girl has been busy. Since the takeover I did on Elite Nigerians you guys have been so loyal.. following me and shit🙌🏼 so heres a written version of the recipe.

Kebab first;

for the spices you need;

Black pepper

White pepper

Peri peri spice

Peri peri marinade

Portuguese chicken spice

Chicken spice

Garlic salt

Ground ginger

Cayenne pepper

Ground coriander

Bbq spice

Ground garlic

1 maggi cube. (Or two. Depending on your taste)

You also need chicken breasts, skewers, bell peppers(green, yellow and red), onions and a bowl.

Method

Cut your chicken breast, bell peppers and onions in chunks.

Add in all the spices to the chicken and mix

Add in the onions and bell peppers. Mix again

Bring out your skewers and wet them.

Stick your chicken, onions and bell peppers to the skewer. (One chicken chunk, one pepper, another chicken, a different pepper, chicken and then onion. Or just see the picture below)

Place in the oven and bake till chicken is done. (You can baste occasionally with the left over marinade)

(Please ignore my greasy oven. I promise the rack isnt greasy as i washed it before placing the kebabs on it)

Now the Mayo spring-rolls

Youll need;

1tbs corn flour

1.5 cups all purpose flour

1.25 cups of water

Salt

Shrimps

Chopped onions

Oil for frying

Brush

Method

Mix the water, corn flour and all purpose flour in a bowlcut your shrimps and clean them. Add in mayonnaise

Get a clean brush to use for making the wraps

Brush the mixture to a hot skillet and peel off as soon as it starts to dry out.

Mix the mayo, shrimps and onions together in a bowl. Add a pinch of salt

Take a wrap and fill it like so. Then roll it like so. (See pictures below)

So i dont have a picture of where to place the filling but just put it at an extreme corner in the center so that you can fold it this way and roll it afterwards

Glue the edges with leftover mixture for the wraps. I forgot to tell you to leave about a tablespoon of the mixture

Time to fry these beauties. You deep fry them for 2-3 mins until the wraps turn golden brown. (Please dont burn them😫)

And voila! Youre done. Serve with ketchup or whatever you want. I had mine for iftar with milk kunu and some salad. If you ever try them please tag me on it or just send it directly to me..
