Hi guys, its 2020. I want to start the year with a recipe that I really really love and make every other day since I came back from Italy. I happen to eat at a Restaurant in Rome called Santa Maria, and the sea food pasta there is so amazing and I decided to replicate it. It is so easy to make but don’t over do it. Here goes;
You’ll need;
Cooked spaghetti (Al Dente)
Sea food cocktail (shrimps, calamari, mussels, octopus etc)
ketchup ( about a cup)
2 tomatoes chopped
1 Onion chopped
2 garlic cloves (minced)
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon ginger powder
1/2 teaspoon black pepper powder
1/2 teaspoon dried rosemary
1/2 teaspoon dried basil
1/2 teaspoon salt
1 teaspoon freshly chopped habanero pepper
1 cup diced chicken breast
2 – 3 tablespoon olive oil
1 sachet tomato paste
Method;
In a pot add oil and heat.
Add in chicken, onion and tomatoes.
Stir fry for a bit. Add in spices then put in the ketchup, tomato paste and sea food.
Put half a cup of water and let boil till seafood is cooked (about 5mins).
Check the salt and adjust.
Now add in the pasta and toss together.
Serve in a bowl and garnish with basil if you’d like.
I hope you enjoy making this pasta as much as I did. It is still my fave pasta till date.
