Few days ago I made a banana bread that got quite some attention. A lot of people messaged me for the recipe and I have finally written it down.
It’s so delicious and filling that I could have a slice for suhur and be okay the whole day. (Lmao eat your food, all bellies arent the same😂). So here goes;
Ingredients :
1 3/4 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground all spice
1/4 teaspoon cardamom
1/4 teaspoon nutmeg
3/4 cup sugar
1/4 cup unsalted butter melted
1/4 sesame oil
1 cup whole almonds (or crushed)
2 tablespoons plain yogurt
2 large eggs
3 riped bananas (mashed)
1 teaspoon vanilla
Sliced ripe bananas for decoration
Method
Preheat oven to 350F ( or just turn on your oven at gas mark 3 for like 10mins).
In a mixing bowl, mash the bananas.
Add in sugar and mix.
Add in the wet ingredients (butter, sesame oil, yogurt, and eggs). Add in the spices (cardamom, cinnamon, nutmeg and all spice). Mix well. You could use a hand mixer but I just used a fork.
Add in dry ingredients. (Flour, baking soda, baking powder and salt).
Mix well till thoroughly incorporated. Fold in the almonds.
Butter and flour a baking pan/dish. Pour in the mixture and level. Cut the bananas you kept aside for decoration and arrange on top of the batter.
Bake for 50-60 minutes or until a toothpick comes out clean when inserted into the center.
