My Italian Amaretti Biscuits

I know, I know. It’s been forever since I typed or posted anything. So much has been going on but that’s a story for another day.

Few days back, I was watching a movie and they served amarettis with some tea. I felt like eating some so I came up with a make shift recipe.

Honestly my eggs got runny due to the hot weather so I had to improvise. I broke 5 eggs, took out the yolks and beat the whites. Nothing happened so I added cream and boom, it happened.

Here’s my recipe:

Ingredients:

5 egg whites

1/2 cup whipping cream

2 1/2 cups almond flour

3/4 cup sugar

1 teaspoon baking powder

1 cup icing sugar (for dusting)

Method:

Seperate the whites of 5 eggs from the yolks. Put the whites in a clean dry bowl, beat until it becomes somewhat fluffy or white (not stiff peaks). Add in the cream and beat until it becomes somewhat stiff.

Fold in the sugar, baking powder and almond flour. Put the mixture into a piping bag and pipe a dollop into the icing sugar and roll to cover.

When your rounds are fully coated with the icing sugar, line a baking tray with parchment paper and bake for 15-18mins at 180 degrees.

Serve with tea.

Caution: You may get addicted.

To store your biscuits, just put them in an airtight container and keep at room temperature. They’ll be good for 5days. Enjoy.
